Beer production process: Saccharification (water + crushed malt → saccharification decomposes protein and starch. One saccharification process takes about 7-8 hours), filtration, whirlpool sedimentation, cooling, fermentation tank (fermentation period is 7-12 days.), and beer output.
Raw material preparation: mainly includes the purchase, storage and pretreatment of barley (sometimes added with rice, corn and other grains). Barley should be stored for 2-3 months after harvest to stabilize its quality. Malt preparation: The barley is made by screening, washing, soaking, germination, drying and rooting. In this process, the insoluble starch in barley is converted into soluble sugars, in preparation for the subsequent saccharification process.
Crushing: malt and rice and other raw materials are crushed by the crusher to increase their surface area and facilitate the subsequent saccharification and gelatinization process. Glyification and gelatinization: the crushed raw material is mixed with water and heated in a saccharification pot so that the enzymes in the malt convert starch into fermentable sugar. At the same time, some raw materials (such as rice) will be gelatinized to improve the efficiency of saccharification. Male filtration: the saccharized mash is used to separate the wort from the mash through the filter tank or filter press to obtain the clarified wort.
Boil: Heat the wort in a boiling pot and add hops to add bitterness and aroma. The boiling process also helps to sterilize the wort and solidify the protein. Circular precipitation and cooling: The boiled wort passes through a circular precipitation tank to remove hop fragments and hot coagulants. The wort was then cooled to a suitable temperature for yeast inoculation. Fermentation: The cooled wheat juice is inoculated with beer yeast and the fermentation process begins. Yeast converts the sugar in the wort into alcohol and carbon dioxide, creating a characteristic beer flavor. The fermentation process usually lasts from days to weeks, depending on the type of beer and the production process.
Pre-filling treatment: the fermented beer is centrifuged and filtered to remove impurities such as yeast and macromolecular protein in the fermentation liquid to get clear and transparent beer. Then, a pasteurization treatment was performed as needed to extend the shelf life of the beer. Filling and packaging: The processed beer is filled into containers such as bottles, cans or barrels. During the filling process, the sanitary conditions need to be strictly controlled to avoid the contamination of the beer. After filling, seal, label and pack to make the finished beer.
